Followup:

I don't think I am going with the pre-made site offered by SMC. I love
their products. They sell quite well, but their 'ecommerce' site
is WAY overpriced! The only redeeming quality is the real time product
tracking . As far as I know, you cannot 'hand code' anything on
their pages... meta tags, code, anything. They just have templates and
you add whichever products you want. Very inconvenient!

I have decided to go with a very reliable company... www.olm.net
Great prices, support, shopping cart and merchant accounts. I have
my domain name and am just getting the $ together to set up my site.
(I'll then hire Deadlock for the promotion.)

I never did get a reply from SMC about customizing a site.
Deadlock never answered me in regards to this either. This was
the first reply (months since I first asked this)

Keep an eye out.. it will be www.nicknack.cc and www.nicknack.net
