The main benefit of "guessing"(I like to call it "estimating" :) beforehand, is you know how much you are going to get paid, and they know how much it is going to cost. Additionally, you can get paid in increments, which protects you from a client backing out, or funding disappearing.

There will probably be some bumps in the road as you get a feel for how much time it will take, but it is a better way. I would recommend trying to get smaller jobs in the beginning to protect you from making excessively costly mistakes, or use that disclaimer like I said.
